Distiller's Council

In 1996, a group of bourbon pioneers and retired craftsmen of the historic George T. Stagg Distillery gathered at Buffalo Trace to rediscover forgotten traditions — the Distiller's Council. This bourbon honours that gathering: Taylor's original sour mash process revived, and the whiskey crafted in near-1880s fashion.

The Expression

The Council's charge was to blend time-honoured technique with modern expertise, inspired by Colonel Taylor's trailblazing methods. The result, bottled at 100 proof, opens grain-forward with biscuit and pastry notes, then gives way to toasted sugar, dark caramel, crème brûlée, plum dessert and nougat.

It is the newest chapter in the Taylor line — a 2025 addition, and the fourteenth expression to join the Colonel's portfolio — celebrating the enduring spirit of innovation that defines his legacy.

Tasting Notes

Grain-forward, quietly indulgent.

A grain-forward nose of biscuit and pastry opens onto a palate of toasted sugar, dark caramel and crème brûlée, deepening through plum dessert and nougat — an 1880s method speaking in a distinctly modern register.

About the Marque

E.H. Taylor, Jr.

Colonel Edmund Haynes Taylor, Jr. is remembered as the father of the modern bourbon industry, and the title is earned. At the close of the Civil War he established the O.F.C. Distillery — known today as Buffalo Trace — and made it the most advanced of its age: copper fermenters, column stills, climate-controlled ageing warehouses, methods still in use a century and a half later.
